Slow Cooker Pulled Pork With Lime-Cilantro Slaw and Crispy Onion Strings

A few years back I got my first slow cooker and to say it was a transformative experience might be an understatement. I’ve cooked such a wide variety of different foods using it and the best part is that it’s always really really easy. 

My go-to slow cooked food is pulled pork and while I have tried a bunch of recipes, this is by far my favorite. The recipe is similar to a lot around the internet, but I prefer to use pork tenderloin instead of the traditional pork butt. Then when you top it with this delicious lime-cilantro slaw and crispy fried onion strings …. DELICIOUS.

Pork Tenderloin Slow Cooking

Layer the slow cooker with onions + garlic and then slather the pork tenderloin with the spice rub add some Dr. Pepper and fire up your slow cooker!

Crispy Friend Onion Strings

Mmmmmm fried food! The thinner and crispier the onion rings/strings the better in my opinion.

Pork ingredients
  1. 3 lbs pork tenderloin
  2. 2 medium yellow onions
  3. 1 medium red onion
  4. 5 garlic cloves
  5. 2 tbs fresh ground black pepper
  6. 3 tbs kosher salt
  7. 1 tsp cayenne pepper
  8. 2 tbs cumin
  9. 1 tbs chilli powder
  10. 4 tbs brown sugar
  11. 2 tbs paprika
  12. 18 oz Dr. Pepper
Slaw ingredients
  1. 1/4 cup mayonnaise
  2. 1/4 cup chopped fresh cilantro
  3. Juice of 1 lime
  4. 1 tbs salt
  5. 1 tsp cumin
  6. 1 1/2 cup shredded red cabbage
  7. 1 1/2 cup shredded green cabbage
Onion strings ingredients
  1. 1 cup all purpose flour
  2. 1 tsp salt
  3. 1 tsp chili powder
  4. 1 tsp garlic powder
  5. 1 medium onion sliced very thin
Pork cooking directions
  1. In a medium bowl mix together all spices
  2. Rub spice mixture on to pork tenderloin
  3. Slice onions into rounds and evenly place on bottom of slow cooker
  4. Thinly slice garlic and add on top of onions
  5. Place pork tenderloin on top of the onions and garlic
  6. Add Dr. Pepper - doing your best not to pour over the pork tenderloin so that the rub stays on
  7. Set slow cooker to 8 hours on low, cover and let cook
  8. Once pork is cooked, use colander to drain and to slow cooker then use fork to pull the pork
Slaw cooking directions
  1. Whisk together mayonnaise, cilantro, lime juice, salt and cumin together in a bowl
  2. Mix in cabbage and toss to coat
  3. Cover and refrigerate for at least 30 minutes
Onion strings cooking directions
  1. Combine flour, salt, chili powder and garlic in a resealable plastic bag
  2. Place onions in bag and toss to coat
  3. Heat 1/4 - 1/2 inch oil in a skillet over medium-high heat - sprinkle flour in oil and if it sizzles it's ready
  4. Remove onions from bag, shake off excess flour and use your hands to separate onions
  5. Fry, in batches, until golden brown and crispy, about 2 minutes
  6. Use tongs or slotted spoon to transfer to a paper towel lined plate and sprinkle with salt
  1. For the spice rub I tend to just make it up as I go each time, but you want it to be both spicy and sweet, so feel free to get creative and experiment.
  2. If you want to add bbq sauce to your pork that's totally your prerogative. I find that with the slaw it's not necessary but sometimes I'm lazy and don't make the slaw and so in those instance I think the bbq sauce is a nice addition.
